Just a short post tonight after a long day of driving. We are currently tucked in for the night in our hotel in Boulder, Colorado and the mountains are ahead of us on the horizon. We ended up eating lunch at a small mom and pop establishment just off the interstate. We kind of like to stay away from restaurant chains when we travel, and out in the middle of Kansas Jim had no suggestions of where to eat. Remember, the deal is he will take me anywhere I want to go as long as he picks where we eat! So, trying to steer clear of chains, we took a side trip to Wilson, Kansas, and it was a pretty good choice. BUT Wilson is known as the “Home of the Giant Czech Egg” so hello, had to go see it!

Back in the late 1800’s Wilson was the home of a large population of Czech immigrants who settled there, and there are many in the little community with Czech family connections. They still celebrate traditions from their heritage. Kind of cool, isn’t?
Dinner At Jim’s Choice – Grammy’s Goodies!
You may remember that Jim loves Diners, Drive Inns, and Dives with Guy Fieri. I won’t go into detail but he has a WHOLE LIST of restaurants he would like to try on his phone listed by state and town! So, he planned our route to Las Vegas so we could stop at Grammy’s Goodies for lasagna which was incredible! And since it was our first time there, they treated us to homemade garlic knots – omg. Between those, the pasta, and the dessert we had them box up for later tonight, we may well be in a carb coma!

SIX GARLIC KNOTS slathered in garlic butter and parmesan the size of SOFT BALLS! We each at one cause they were so darn good, and the other four are boxed up for tomorrow night, along with over 1/2 of the lasagna.

This was one of the three cases of desserts to choose from. See the giant cream puffs in the bottom right corner???? Each of them has one POUND of whipping cream inside!!! We selected two tiny cream puffs – silver dollar size, a chocolate dipped cherry cream cannoli and some how one of those giant chocolate chip cookies made in the box for tomorrow’s drive.
We have another long day of travel tomorrow, but I’ll be back the next day to share what crafting kits I brought to work on. Until then, enjoy doing whatever you love, and God Bless! I have a bite of cannoli calling me!
