Ok – the saga of Pool Boy’s pumpkin bars continues, day 2! I shared we were going to a fish fry Thursday for lunch and it was delish!!! I threatened to skip the fish and go straight to the dessert since Pool Boy’s pumpkin bars were going to be on the dessert table, but I did not. We had fish, fried potatoes, hushpuppies, cole slaw, baked beans, pasta salad, candied apples, apple crisp, cherry dump cake, and pumpkin bars – all for less than 20 people!!!
So, the best part of Jim’s pumpkin bars is the homemade cinnamon cream cheese icing!!! Oh my gosh. And he reminded me several years ago he had made the bars, but didn’t want to take the time to make the icing, and instead turned to one of the cream cheese frostings you buy in the little plastic tub. That night Megan came in, saw what he had done and proceeded to scrape the ENTIRE icing off the bars and make the cinnamon cream cheese icing, then replaced the “just wrong” icing dad had try to get by with. Do not stand in the way of a delicious cream cheese frosting and our daughter!
Time For The 4th Christmas Card Class Sign Up!!!!
So today I concentrated on the 4th Christmas card class!!! I love making Christmas cards, and designing cards for a class such as this one takes thought. You have to be cautious to not use the same inks on different tables – if you duplicate the ink colors, you might not have enough ink pads to use at both tables – and it’s a math game of “do I have enough of this DSP to make 60+ cards in that design???”.
So, the first card I designed used Real Red and Shaded Spruce, so those colors were unavailable to use again. I turned to Mossy Meadow and Cherry Cobbler for this card, and paired with several dies as well as the Snowflake Sky embossing folder. Dies used include the deckled rectangles, Nested Essentials, and the Reindeer dies for the tree. The greeting came from the Regal Reindeer as well.
Just because the Fragrant Forest stamp set is a large background stamp doesn’t mean we are limited to a large mat. I only had to ink up about 1/2 of the stamp for the deckled rectangle. Don’t limit background stamps to simply the “background”!

Pool Boy said he was willing to share his Pumpkin Bar recipe so reach out if you would like a copy. And just know, my daughter would be highly disappointed in you if you were to turn to the pre-made, artifically inferior cream cheese icing!
