Well, the good news is there is no snow outside like the weatherman predicted, but the bad news is the cold, the dreary, the gloomy conditions continue!!!! I need sunshine and warmth!!! Here is hoping that we find that in Destin this coming weekend. Pool Boy has already made some snacks to take, and tonight we will be making his Grandma Clara’s pimento cheese. Some people make pimento cheese with mayo, and that’s not this recipe!!!
Her recipe has a cooked custard-like sauce that we make, and then you pour it over the grated cheese before it cools, so SOME of the cheese begins to melt – yum!!! And you just can’t open those bags of shredded cheese!!! That stuff has been treated so it won’t clump AND it doesn’t melt as well. It takes a bit more time, but we grate our own cheese for this! It takes longer to clean the food processor than the grating of the cheese. Anyone want the recipe?????
